I'll detail the bikes and the kit here...
Things we would change or add to:
Dom
Radio, the idea was to go totally self supported and so I went with SLA as they could stand the abuse from dynamo charging and solar easily. For lighter bags I'd loose the large heavy SLA batteries and rely on a set of NiMH or liION if you can recharge them for the radio and ATU. As so many places had electric take a small power supply and use that for the laptop, phone and radio when in campsites.
Book some places on the route especially the first place in advance.
In Switzerland and South Germany the problem of finding anywhere open on Sundays was a pain so better planning for campsites and food Sunday morning through to Monday morning.
Tent:
Couple larger tent pegs as the ground was rock hard at times.
Add an awning and ground sheet
Maybe investigate alternative tents as ours is about 10 years old.
Bike:
Change rack for front panniers as low loaders were a right pain as almost came off a couple time because of them.
Review handlebar setup, maybe bike geometry too as sitting more upright was comfortable as I changed the front bar position mid trip.
Get a touring saddle not a racing one!
Add a front bar bag and map carrier. GPS???
Gears that bloody worked! The rear deraileur seems to have had a knock at the mount and this effected changing more than it should have. The result was the lowest gear (biggest cog on rear) was never available. Front was effected as the chnage from largest(1), mid(2), smallest(3) was not smooth and 1-2-3 meant going 1-3 and back up to 2 and going 2-3 meant 2-1-3 so sudden rises were not always welcome.

New panniers and carriers front and back (infact a new bike might be better!)
Water bottle carriers on the frame.
Both:
Maybe different (warmer) sleeping bags as for some of the trip we needed more warmth.
Cooking etc:
A pair of better mugs, maybe those ones with the lids?
I have a 'twin' pair of very old (30 years?) sleeping bags, they zip together so we could keep each other warm. Wonder if you can still buy more modern lighter/squishier/warmer versions of these?
